Ingredients for making scotch egg
(1) Bread crumbs
(2) 1 egg beaten
(3) Vegetable oil for deep frying
(4) 4 large egg
(5) 275g (sausage meat)
(6) 1 teaspoon fresh thyme leave
(7) 1 teaspoon chopped fresh parsley
(8) 1 spring onion very finely chopped
(9) Salt and freshly ground black pepper
(10) 125g flour, seasoned with salt and freshly ground

Method of making scotch egg
(1) Place the eggs, skill in their shells, in a pan of cold salted water. Place over a high heat and bring to the boil, then reduce the heat to simmer for exactly nine minutes.
(2) Drain and cool the eggs under cold running water then peel.
(3) Mix the sausage meat with the thyme, parsley and spring onion in a bowl and season well with salt and freshly ground, black pepper.
(4) Divide the sausage meat mixture into four (dispense) and flatten each out on a clean surface.
(5) Place the seasoned flour onto a plate then dredge each boil egg in the flour.
(6) Place each onto a sausage meat then wrap the sausage meat around each egg makes sure the coating is smooth and completely cover each egg.
(7) Deep each sausage meat coated egg in the beaten egg rolling to coat completely cover.
(8) Then deep and roll into the breadcrumbs to completely cover.
(9) Heat the oil in a deep heavy bottomed pan and fry until breadcrumbs sizzles and turn brown when dropped into it.
